These Banana Pancakes will defy everything you thought you knew about pancakes
You know pancakes, those gluten filled excuses for maple syrup and butter, that sickly sweet breakfast treat that always leaves you feeling bloated and sleepy two hours later? Well, I’ve discovered a better, healthier version that just so happens to have 8 times the protein of regular pancakes without sacrificing flavor.
I always known I’ve found a good paleo recipe hack when my daughters don’t complain about the lack of gluten and instead devour what I’ve created. These flapjacks not only passed the Lott girl test, they’ve become a favorite. Even my youngest daughter who hates almond butter and eggs absolutely loves these pancakes! Beyond that, the bananas add enough sweetness that you don’t even need syrup.
Paleo Banana Pancakes
2 bananas
5 eggs
2-3 tablespoons on almond butter
1 tsp vanilla
1/4 tsp salt
1 tsp cinnamon
dump the above into a blender or mash and combine in a bowl and laddle the batter onto a greased pan (we prefer to use coconut oil). cook until brown on one side and flip to brown the other side. Enjoy with your favorite yogurt or fresh fruit. We sometimes add a tablespoon of cocoa powder for chocolaty pancakes.
