A Green Soup That Demands Respect
Thai Avocado soup with a kick
Finally a green soup that doesn't taste as bad as it looks!
Ingredients
2 avocados chopped
2 peeled and seeded cucumbers
1 or 2 tsp of your favorite thai green chili paste, I like Maesri brand (order on amazon).
1 to 2 tsp sugar
2 tsp lime zest
1 serano chili seeded and chopped
1 can coconut milk
3Tbs fresh lime juice
salt to taste
Toss cukes in a food processor and puree to green sludge-like consistency. Add avocados, chili paste, sugar, lime zest, serrano and a small handful of cilantro (for extra green color), puree. Then add 3 1/2 cups water and the entire can of coconut milk and puree until it resembles green paint. Cover and chill.
Toast coconut flakes in pan, drizzle soup with a spiral of coconut cream and top with coconut flakes and cilantro, serve with a lime wedge. This super tasty, alkalizing soup is full of healthy fats and digestion strengthening spices. As an appetizer, serve in red chili and salt rimmed shot glasses. Your family and friends will regard this soup with suspicion and fear, followed by amazement. Enjoy!
