Pork Lettuce Wraps

Not only are these little wraps of goodness gluten free, but they are also super easy to make.  Pork in Chinese Medicine to lubricate dryness and is Rich in Selenium, zinc, Phosphorus and B vitamins.  The Apple cider vinegar used in the slaw is excellent for boosting digestion and the immune system and Jicima is packed with vitamin C and is an excellent prebiotice that can benefit bone and heart health and regulate blood sugar levels.   This meal makes for an excellent camping dinner too!

Ingredients

  • 1 pound organic ground pork

  • three tablespoons fresh grated ginger

  • 1 Tbsp braggs liquid aminos or soy sauce

  • 1 Tbs mirin

  • 2 cloves garlic chopped

  • 2 shallots sliced

Slaw Ingredients

  • Shredded jicima

  • shredded carrots (4?)

  • Apple cider vinegar to taste

  • 1 spoonful honey

other ingredients

  • 2 heads romaine lettuce

  • one cucumber sliced into strips

  • cilantro

  • hoisin

  • lime juice

First make the slaw by combining jicama with other slaw ingredients, let chill in fridge.  Then saute pork and add the next four ingredients.  Adjust flavors to suite your taste, then spoon pork mixture into lettuce leaves, top with slaw, cucumber strips, cilantro and serve with hoisin sauce and lime wedges.
